While the “Chikushi” of green bamboo is fresh and easy to peel off, in white bamboo Bamboo after oil removal it is tightly adhered between the joints, making it difficult to peel off. Therefore, it stays inside the bamboo split in half and looks as if it is dancing.
Also, bamboo with Chikushi in it is, in our experience, crisp and easy to process, a sign of good luck to predict the bamboo’s condition!
